Oleoresins are a major Indian export line

Spice oils and oleoresins are 12% of India’s spice export value in FY2025-26 — level with cumin and among the largest categories by value. They are concentrated extracts (solvent or CO2) capturing a spice’s colour, flavour and pungency in a standardised, high-value form, widely used by food manufacturers who want consistency without handling whole spice.

How oleoresins differ from whole spice

An oleoresin is sold on standardised active content rather than physical grade — for example colour value for paprika oleoresin or pungency for capsicum and pepper oleoresins. This is why colour chilli like Byadgi (ASTA 130–150) feeds paprika oleoresin, and why the raw-material grade you choose upstream drives the extract’s value.

What to specify

  • Standardised active (colour value, pungency, or key volatile) with a target and tolerance.
  • Extraction route and any residual-solvent limit.
  • Carrier or dispersion format if it is a diluted or plated grade.
  • Contaminant and micro limits appropriate to the destination.

Compliance still applies to extracts

Concentration does not remove safety obligations. Residual solvents, heavy metals and pesticide residues (which can concentrate during extraction) all need attention, and the ethylene-oxide ban and adulterant history of the source spice remain relevant. Design the test panel to the extract, not just the raw spice.
