Decide whether you are buying heat or colour

Indian chilli splits into heat varieties and colour varieties, and choosing the wrong one wastes money. Guntur Sannam S4 delivers 35,000–45,000 SHU with ASTA colour 100–120 — the workhorse heat chilli. Byadgi runs a much milder 8,000–15,000 SHU but ASTA colour 130–150, so it is bought for deep red colour, not heat, especially by extraction and paprika-style buyers. Teja S17 sits at ASTA 110–130.

Guntur in Andhra Pradesh is Asia’s largest chilli market and effectively sets the world red-chilli price. Buying near Guntur gives you the cleanest price discovery for Sannam S4 and Teja. Byadgi trades around its own Karnataka market. Anchoring your negotiation to the mandi benchmark is how you avoid overpaying a trader.

Test for Sudan dye — zero tolerance

Chilli’s signature adulteration is Sudan dye, an illegal red colourant with zero tolerance in the EU and elsewhere. Every bulk chilli programme must screen for Sudan dyes. For the EU also design to aflatoxin B1 5 µg/kg and total aflatoxins 10 µg/kg (dried chillies and paprika are named), ochratoxin A up to 20 µg/kg for dried chillies, and steam sterilisation rather than banned ethylene oxide.

Plan freight around low density

Whole dried chilli “cubes out” — it fills the container’s volume before it reaches the weight limit — so a chilli FCL ships far lighter than a seed-spice FCL. Budget freight per container, and consider whether stemless, cut or ground forms change your loading and your spec. Chilli is 27% of India’s spice export value in FY2025-26, so supply is deep and competitive.
