Properly dried whole spices are stable through a normal sea voyage; the risk is not ageing but moisture pickup, mould and aflatoxin in a humid container. Control moisture (turmeric 12% or below), packaging and ventilation rather than counting days.

What actually degrades spice in transit

• —Moisture: the main enemy. A lot near or above its moisture ceiling can grow mould and aflatoxin in a warm, humid container.
• —Colour and aroma loss: ground spice and high-colour chilli fade faster than whole spice; ASTA colour declines with heat, light and time.
• —Condensation: container "rain" from day-night temperature swings can wet the top layer if ventilation and liners are poor.

How to protect the cargo

Ship dry and keep it dry. Meet the moisture spec before loading (for turmeric, 12% or below), because aflatoxin, capped by the EU at 5 µg/kg for B1, grows on damp spice. Whole spice holds better than ground, so where shelf life matters, ship whole and mill at destination.

Packaging and stowage do the rest: food-grade liners against condensation, sound bags or big bags, and container ventilation suited to the spice. These, not a fixed day-count, decide whether the lot arrives in grade.
