Cassia vs Ceylon cinnamon: which should you buy?
For EU-labelled "cinnamon" and for coumarin-sensitive use, buy true cinnamon (C. zeylanicum); for bold flavour at lower cost where the label allows "cassia", cassia is fine. Never sell cassia as "cinnamon" into the EU.
