Cassia vs Ceylon cinnamon: which should you buy?

For EU-labelled "cinnamon" and for coumarin-sensitive use, buy true cinnamon (C. zeylanicum); for bold flavour at lower cost where the label allows "cassia", cassia is fine. Never sell cassia as "cinnamon" into the EU.

  • Cassia (C. cassia) carries far more coumarin than true cinnamon
  • They are different species India schedules separately
  • Coumarin has EU intake limits, so the distinction is a compliance fact, not a preference

Unless: Your market permits "cassia" or "Chinese cinnamon" labelling and has no coumarin-sensitive intake concern — then cassia’s stronger flavour and lower price win.
